Think meal prep is complicated? Think again. Today, I want to talk about my two favorite breakfasts,
both of which can be put together in less than 5 minutes, and both of which are also made up of real foods.
1. Oatmeal - I buy steel cut oatmeal (the 3 minute kind.) While microwaving my oats, I cut up a banana. When the oatmeal is ready, I dump the sliced banana, some blueberries, some walnuts, some cinnamon, and some flax on top. Super healthy and easy.
2. Breakfast to Go - Some days I run out of time to make breakfast. After all, I am only human. I wake up late and rushed like the rest of us. Instead of skipping breakfast, grab a small sandwich bag. On days when I need to run out, my wife always reminds me to "grab my nuts." I take a hand full of nuts (almonds, cashews or walnuts usually), mix in some berries, and I like to grab a few whole grain crackers. Find some that you like at the grocery store. Just be sure they are a real whole grain cracker and not a potato chip in disguise. I personally like the low fat, low sodium Triscuits. They probably aren't the absolute best option, but they work for me.
That's breakfast in a nutshell. My first 2 weeks on a plant based lifestyle, I literally alternated between these two meals every day. Need variety? Change up the fruit.
